Arroz Con Leche (Cuban Rice Pudding)

This is another of my mother’s recipes that I grew up with.

Arroz Con Leche is simply Rice Pudding. It is a creamy and sweet dessert. You can eat it hot or cold. I like it refrigerator cold.

Here we go….

Ingredients:

  • 1/2 cup uncooked white rice
  • 1 1/2 cups water
  • 1 cinnamon stick
  • A couple of Lemon Zests
  • 4 Cups whole milk
  • 1/2 cup sugar
  • 1/4 tsp salt
  • Ground Cinnamon to sprinkle

Instructions:

  1. In a 3 qt. pan, add water, cinnamon stick, and lemon zest. Bring to a boil and add rice. Stir. Lower temperature to medium-low. Cover and cook for about 25 minutes or until rice has softened and water is almost absorbed.
  2. Add milk, sugar, and salt. Stir.
  3. Cook at medium-low heat uncovered, stirring often so that it doesn’t stick to the pan and milk doesn’t boil over, for about an hour or until the mixture is thick and creamy.
  4. Pour into a heatproof glass container. Cover and refrigerate until cold. Sprinkle ground cinnamon on top.
  5. Serve in pretty glasses and garnish with a cinnamon stick and mint leaves if you wish.
  6. Enjoy!
