This is another of my mother’s recipes that I grew up with.
Arroz Con Leche is simply Rice Pudding. It is a creamy and sweet dessert. You can eat it hot or cold. I like it refrigerator cold.
Here we go….
Ingredients:
- 1/2 cup uncooked white rice
- 1 1/2 cups water
- 1 cinnamon stick
- A couple of Lemon Zests
- 4 Cups whole milk
- 1/2 cup sugar
- 1/4 tsp salt
- Ground Cinnamon to sprinkle
Instructions:
- In a 3 qt. pan, add water, cinnamon stick, and lemon zest. Bring to a boil and add rice. Stir. Lower temperature to medium-low. Cover and cook for about 25 minutes or until rice has softened and water is almost absorbed.
- Add milk, sugar, and salt. Stir.
- Cook at medium-low heat uncovered, stirring often so that it doesn’t stick to the pan and milk doesn’t boil over, for about an hour or until the mixture is thick and creamy.
- Pour into a heatproof glass container. Cover and refrigerate until cold. Sprinkle ground cinnamon on top.
- Serve in pretty glasses and garnish with a cinnamon stick and mint leaves if you wish.
