Though I already have this recipe for Arroz con Pollo under my Cuban recipes, I am reposting with exciting news! Here is the recipe for Arroz con Pollo:
Ingredients:
- 4 Chicken Breast cut in 2″ pieces
- 3 Cups chicken broth
- 1 cup beer
- 2 cups long grain rice
- 1 can green peas
- 1 jar Sclafani Roasted Red Peppers, sliced into thin strips
- 1/2 cup extra virgin olive oil
- 1 packet Goya Sazon con Azafran
- 1 tbs granulated garlic
- 1 tbs onion powder
- 1 tbs salt
- 2 tsp black pepper
Instructions:
- Place olive oil in a 3 qt pan in medium-high heat. Add chicken pieces and stir until lightly golden.
- Add broth and beer. Add 1/2 of the can of peas and 1/2 of the sliced red peppers. Add the rest of the ingredients except for the rice.
- Stir and bring to a boil. Add the rice and stir until everything is mixed.
- When it returns to a boil, lower temperature to medium-low. Cover and cook for 25 to 30 minutes. You will know it’s ready when most of the liquid is absorbed.
- Remove from heat and let it sit for about 5 minutes. When ready to serve, sprinkle the rest of the peas and pimientos over it. Enjoy!
Serves 4 generously.
